Homemade Granola!




I've always loved granola but didn't know how much until I ate it fresh from the oven!  Amazing!  This is my adaptation of this recipe - http://allrecipes.com/Recipe/Megans-Granola/Detail.aspx from allrecipes.com.




Ingredients

4 cups old fashioned rolled oats
3/4 cup milled flax seed
1/2 cup whole wheat flour
1 cup chopped nuts
3/4 teaspoon salt
1/4 cup brown sugar
2 tablespoons sorghum (or molasses or maple syrup)
1/4 cup honey
1/3 cup coconut oil
1 1/2 teaspoons cinnamon
1 1/2 teaspoons vanilla extract

1. Preheat oven to 310 degrees F.  Line a baking sheet with aluminum foil or parchment paper.

2. Combine oats, milled flax seed, whole wheat flour and nuts.  Toss together and set aside.

3. Stir together salt, brown sugar, honey, sorghum, oil, cinnamon and vanilla in a medium saucepan.  Bring to simmer over medium heat, then pour over dry ingredients and stir to coat.

4. Spread the mixture evenly onto lined baking sheet.  Bake for 15-20 minutes turning the granola once during baking.  Let cool then stir and store in airtight container.


This typically lasts me about two weeks and keeps well in an airtight container.  I'm sure you could keep in longer than that, especially if you store it in the fridge.
