The
A couple of months ago I was on Pinterest (Yes, I'm one of those slightly addicted people!) and came across a pin for something called The Whole30 program.  It was a food program that followed a very strict paleo style diet that claimed to get rid of sugar cravings, give you more energy, kick start your metabolism, help with skin and digestion.  I am always skeptical of "diets" and weird cleanses where all I can consume for a week is wheat grass juice or bananas.  But this seemed pretty normal.  You cut out dairy, soy, grains, alcohol, legumes, sugars (including artificial and natural, IE aspartame, stevia, honey) and a few additives: carrageenan, MSG and sulfites.  The surprising thing to me was you still get to eat REAL food!  Lean meats, fresh vegetables and fruit, healthy fats and nuts.

So after reading and researching for several weeks I decided I wanted to give this a try.  I had several things I wanted this program to address.  The main two being my digestion and sugar cravings.  I also wanted to see how it helped some inflammation in my back and knees.  The program also claimed to increase and stabilize energy levels and who doesn't want that.

In all honesty I thought the program would be a lot easier for me than it was.  The first few days were fine, good even.  I felt like I was doing some thing good for my body.  The food was tasty, this was going to be a breeze!  The first week was ok, took a little bit of adjusting to eating eggs every morning (I really don't care for eggs) but I noticed by the end of the first week my blood sugar levels had stabilized!  I was no longer getting shaky and grumpy every few hours!  I was certain I had this under control. 

Then by week 2 I was tired of eating the same foods.  I felt like I didn't have any variety (I really wanted some milk in my coffee and yogurt and granola).  I really don't like vegetables, I eat them because they are good for me and I'm an adult, but I really don't like them.  So I found that I wasn't eating a lot at all.  I would have coffee for breakfast and then not eat anything until 1 or 2 in the afternoon.  What I did eat was watermelon and chicken......and that was about it.  I started to feel lethargic and down.

By week 3 my energy levels did start to stabilize and my sugar cravings had greatly decreased!  At this point though I really just wanted to eat comfort food and for me this was chicken and dumplings and lima beans and rice!  I would have to say week three was the best week for me.  My cravings were minimal, energy levels were balanced.  I was feeling pretty good.

Days 25-28 were by far the worst days for me of the entire program.  I was grumpy, hungry, frustrated and just wanted to EAT!  I'm pretty sure this was my fault though because at this point I really wasn't eating anything, let alone the healthy meats and veggies I should have been.  But by day 29 I was feeling much better, mainly because I had almost made it! 

Day 31!  The day I had been waiting for the last month had finally arrived!  And all of my hard work went down the drain.  See you are supposed to slowly incorporate food groups back in.  Well.....I didn't do that.  I had cereal and milk for breakfast, cheesy pizza and cinnamon sugar pretzels for lunch, beans and rice for dinner and chocolate chip cookies for dessert.  Needless to say I had a HUGE bellyache that night.

It has been 2 weeks since the end of my Whole30 journey.  I will say that I have eaten worse after than  I did before.  I think I lost sight of why I was doing this and toward to end started to focus on the things that I couldn't have instead of the healthy food I could have. I also learned that some of those things that I love and crave are not necessarily the best things to put into my body.  I've learned that gluten is not my friend.  I believe it is the main cause of my digestive upset.

All in all I believe the Whole30 program has been beneficial.  I'm glad I did it and I'm thankful for the knowledge I gained from it.  I plan on doing it again....someday :)

Outfit of the Day!

I'm so glad the weather has warmed up!  I feel like hibernating in winter and as soon as it's warm enough to be in shorts, I am!  I love going to the beach and taking in the suns warm rays.  But mostly I enjoy not having to wear a million layers to stay warm (I'm very cold natured, so if the temperature drops below 60, I'm bundled up).  So in honor of warmer weather,  I thought I'd post this outfit from Friday.


 Now, this is a very basic outfit, but I think it's adorable for Spring/Summer.  The top is from JCP, shorts are American Eagle, purse is from TJMaxx, blazer is Charlotte Russe, belt is Tommy Hilfiger and shoes are from Target.  Add a couple of sparkly accessories and you're all set!
I hope yall are enjoying the warmer, sunnier weather as much as I am!

Homemade Granola!




I've always loved granola but didn't know how much until I ate it fresh from the oven!  Amazing!  This is my adaptation of this recipe - http://allrecipes.com/Recipe/Megans-Granola/Detail.aspx from allrecipes.com.




Ingredients

4 cups old fashioned rolled oats
3/4 cup milled flax seed
1/2 cup whole wheat flour
1 cup chopped nuts
3/4 teaspoon salt
1/4 cup brown sugar
2 tablespoons sorghum (or molasses or maple syrup)
1/4 cup honey
1/3 cup coconut oil
1 1/2 teaspoons cinnamon
1 1/2 teaspoons vanilla extract

1. Preheat oven to 310 degrees F.  Line a baking sheet with aluminum foil or parchment paper.

2. Combine oats, milled flax seed, whole wheat flour and nuts.  Toss together and set aside.

3. Stir together salt, brown sugar, honey, sorghum, oil, cinnamon and vanilla in a medium saucepan.  Bring to simmer over medium heat, then pour over dry ingredients and stir to coat.

4. Spread the mixture evenly onto lined baking sheet.  Bake for 15-20 minutes turning the granola once during baking.  Let cool then stir and store in airtight container.


This typically lasts me about two weeks and keeps well in an airtight container.  I'm sure you could keep in longer than that, especially if you store it in the fridge.

It's Freezing!

Well, technically it's like 40 something, but I FEEL like it's freezing.  So I bundled myself up and braved the "cold".

I LOVE this scarf that my sister gave me for Christmas!  It has this really cool 3D chevron pattern and metallic thread.
Scarf is Mossimo from target.  It's not available online, but may still be available in stores.


 These boots are not my favorite pair, but the are lined so they are really warm and comfy.
Boots are from Payless and the leggings are from TJMaxx.

 
 I kept the makeup pretty simple.  Revlon Colorstay foundation #180, set with NYX HD powder foundation in Nude.  e.lf blush in Tickled Pink.  I used and e.l.f single shadow in Moondust all over the lid and a Covergirl single in Brown Smolder in the crease and outer corner, Revlon Colorstay liquid liner in black and Tarte Lights, Camera, Lashes.  Topped off my lips with e.l.f liquid lipstick in Pink Lemonade.

I made it through the day without freezing, yay!  Honestly I have to turn the A.C. on in the car a couple of hours after I left the house :p

Annual Blog Post!

I just realized it has been an entire year since my very first (and only) blog post.  When I started this blog I really did intend on keeping up with it.  I am, however, one of those people who starts a project with the best of intentions and then gets distracted by the next thing and well, lets just say I have a few unfinished projects :)  I really want this blog to correlate with my YouTube channel and believe it or not I am a person who likes a schedule and as part of the new year, I would like to get on a consistent one with both my channel and this blog.  With that being said...........


I just filmed my 2012 Beauty Favorites!


I had some products that I really loved this year.  I'm pretty sure I said the word love over 50 times in the video :P  You know how it is when you find something great, you want everyone else to know how awesome it is and share in the love-fest!
I honestly hope this won't be an annual post :)  More consistency this year!  I wish everyone an amazing, happy and healthy 2013!

Anti Tator-Tot Casserole

Welcome to my first ever blog post.  I decided to start off by sharing one of my favorite things in life, food.  I like to cook and I like to eat.  I also like to feel good about the things I eat, so I like to take recipes that may not be so healthy or that contain a lot of processed foods, like tator tot casserole (which I really love!) and turn them into something that I feel good about putting into my body.  So here we go!

Ingredients

2 medium sweet potatoes
3 medium russet or other white potato
1 to 3 tbs of olive oil
salt and pepper

Cut the sweet potatoes into chunks coat with olive oil, salt and pepper.  Bake at 400 degrees for around 45 minutes.  They should look something like the picture below.




Ingredients part II

ground turkey or mushrooms

1 to 2 tbs olive oil
salt pepper
1/2 onion, finely chopped
1 tsp or so of garlic
1 tbs flour, I used soy
1 cup of milk, I used 1%

While the potatoes are roasting, brown the ground turkey or mushrooms (typically a can of cream of mushroom soup is involved in tatortot casserole) in the olive oil.  When brown, add salt, pepper, onion and garlic.  As well as any other spices you can think to throw in there.  When onions are translucent, sprinkle the flour in and cook for 30 seconds or so.  Add the milk and stir until bubbly and thickened.  Set aside if until potatoes are done.


When the potatoes come out of the oven, place them in a baking dish and pour the sauce mixture over it.  Some of my roasted potatoes didn't make it into this dish, because I really love roasted potatoes and they ended up in my mouth :)


Then top with a little shredded cheese and bake at 350 for 30 minutes.
